Indian (South) Food Guide for Travelers

South Indian cuisine is lighter, tangier, and more rice-based. Dosas the size of your arm, fragrant coconut curries, fiery Chettinad spices, and filter coffee create a dramatically different food culture.

Dosa Varieties

Masala dosa is just the beginning. Paper, rava, pesarattu, set, cheese, egg dosa. One restaurant could feed you differently for weeks.

Kerala: Spice Garden

Fish molee, avial, appam with stew, karimeen pollichathu. Kerala grows the world's best cardamom, pepper, and cinnamon.

Banana Leaf Meal

Rice on a fresh banana leaf surrounded by sambar, rasam, vegetables, curd, pickle, papadum, payasam. Everything refilled. Under $3.

Filter Coffee Culture

Beans roasted with chicory, brewed in brass filter, mixed with hot frothed milk. Pour between tumbler and daurah. Every town has its favourite shop.
