The Milk Bar Experience
Bar mleczny are communist-era holdovers that became beloved institutions. Subsidised cafeterias serving pierogi, zurek, schabowy at prices that seem like a mistake.
Polish Soup Culture
Zurek (sour rye) is unique to Poland. Barszcz is a Christmas tradition. Rosol is Sunday lunch. Grochowka and ogorkowa are everyday staples.
Regional Specialities
Krakow is the pierogi capital. Tatra Mountains have oscypek and lamb. Silesia does its own dumplings. Gdansk specialises in fish.
Vodka Culture
Polish vodka is superb. Zubrowka, Belvedere, Chopin. Drunk ice-cold with food. A tasting in Krakow or Warsaw is an excellent evening.

Dietary Restriction Guide
Vegetarian
Pierogi ruskie are Poland's best vegetarian dish. Placki, nalesniki, sauerkraut dishes, and mushroom soup are available.
Vegan
Pierogi with sauerkraut and mushroom are often vegan. Zurek can be meatless. Barszcz is sometimes vegan. Warsaw and Krakow have growing vegan scenes.
Gluten-Free
Bigos, grilled kielbasa, potato pancakes, and most soups are naturally gluten-free. Pierogi and breaded dishes contain gluten.
Common Allergies
Dairy in pierogi, sour cream, and sauces. Eggs in breading. Mushrooms everywhere. Say 'Mam alergie na...'.
Ordering Tips
- •Visit a bar mleczny (milk bar): subsidised cafeterias with incredible prices. Point at what you want.
- •Polish meals start with soup. Zurek, barszcz, and rosol are the classics.
- •Portions are enormous and prices low. A soup and a main is usually more than enough.
- •Tipping 10% is standard. At milk bars, tipping is not expected.
- •Vodka is served ice-cold in small shots. Zubrowka with apple juice is the classic.
