How Vietnamese Street Food Stalls Work

  • Goi cuon — Fresh spring rolls with shrimp, pork, herbs, and vermicelli in rice paper. Light and refreshing.

  • Com tam — Broken rice with grilled pork chop, egg, and pickled vegetables. A Saigon classic.

  • Cao lau — Thick noodles in a small amount of rich broth with pork and herbs. Unique to Hoi An.

Navigating Allergens in Vietnamese Food

Vietnamese cuisine uses fish sauce (nuoc mam) in nearly everything — it is the base flavor of the cuisine. Shrimp paste and dried shrimp also appear frequently. Peanuts are common as garnishes and in sauces. Soy sauce is used in many marinades and dressings.
