Street food vendors around the world share common practices. The menu is usually a sign board with a few items. Photos or displays of the food help you choose. Prices are listed next to dish names. The vendor specializes in one thing and does it excellently.

The challenge is reading the signs. They are handwritten, use local abbreviations, and assume you already know what everything is. Here is a city-by-city guide.

Bangkok: Reading Thai Street Food Signs

Look for numbers — they indicate spice level or size options. "Pad" means stir-fried. "Tom" means soup. "Kai" means chicken, "moo" means pork, "kung" means shrimp. Most vendors have display images. Point and say the protein you want.

Mexico City: Taco Stand Signs

Taco stands list meats: "al pastor" (spit-roasted pork), "carnitas" (braised pork), "bistec" (beef steak), "suadero" (brisket), "lengua" (tongue), "cabeza" (head meat). If it says "con todo" it means with everything — onion, cilantro, salsa, lime.

Istanbul: Kebab and Simit Signs

"Doner" means the rotating meat spit. "Balik ekmek" is fish sandwich. "Simit" is sesame bread ring. "Kestane" is roasted chestnuts. "Misir" is grilled corn. Prices are in Turkish lira.

Marrakech: Jemaa el-Fnaa Food Stalls

Signs are often in Arabic and French. "Tajine" is the iconic slow-cooked stew. "Harira" is tomato-based soup. "Merguez" is spicy lamb sausage. Numbers on signs indicate stall numbers, not prices. Ask the price before ordering.
