Small family-run stalls: the backbone of Indonesian eating. Fresh food, generous portions, tiny prices. Busiest warung at lunchtime is always the best.
The Sambal Universe
Hundreds of varieties. Sambal oelek, sambal terasi, sambal matah, sambal dabu-dabu. Each region and family has their own.
Regional Diversity
Java does gudeg and rawon. Sumatra has rendang and Padang cuisine. Bali has babi guling and lawar. Sulawesi does coto makassar. Each island is different.

Dietary Restriction Guide
Vegetarian
Excellent for vegetarians. Tempeh, tofu, gado-gado, many vegetable dishes. Say 'tanpa daging'. Bali has a strong vegetarian scene.
Vegan
Tempeh, tofu, gado-gado without egg, vegetable curries. Bali is vegan paradise. Watch for shrimp paste (terasi) in sambals.
Gluten-Free
Rice dishes, rendang, satay are gluten-free. Soy sauce (kecap) is common. Noodles use wheat.
Common Allergies
Peanuts in satay, gado-gado. Shrimp paste in sambals. Coconut in curries. Say 'saya alergi terhadap...'.
Ordering Tips
- •Warungs serve the best food. Look for the busiest ones.
- •Nasi Padang: take what you want, pay for what you eat.
- •Sambal is served with everything. Start carefully.
- •Eat with right hand for authentic experience. Left hand is unclean.
- •Tipping not expected at warungs. 5-10% at restaurants.
